Spuntino, the wood-fired pizzeria at 22 S. Main St. in Doylestown, holds the highest Neapolitan pizza rating in Pennsylvania.

The distinction comes from a Washington Post analysis of 7.5 million Yelp reviews published in August 2023. The Post developed a formula to rank the best regional pizza styles in each state, and Spuntino topped the Neapolitan category statewide.

Food writer Jenn Ladd profiled the restaurant and the family behind it in the Philadelphia Inquirer on Saturday, Sept. 19.

Roberto Carollo, Spuntino's owner, opened the restaurant in 2014 with his brother Salvatore inside Main Street Marketplace. The brothers are fourth-generation pizza makers whose family roots trace to their Sicilian great-grandfather's bakery. Neither had made Neapolitan pizza or worked a wood-fired oven before launching Spuntino.

Carollo is now the sole owner. The brothers also operated a Northern Liberties location from 2015 to 2023.

Despite the state-top ranking and more than a decade in business, Carollo told the Inquirer that visibility remains a challenge for suburban restaurants.

"We've been here 12 years, but even Doylestown residents are still finding out about us," Carollo said.

The pizzeria sits inside Main Street Marketplace, a shared retail space on South Main Street that also houses Hops/Scotch and the Department of Note stationery boutique. The marketplace anchors a stretch of downtown Doylestown that has drawn steady foot traffic from neighboring shops and restaurants along Main and State streets.

Spuntino's 23-pizza menu features wood-fired pies baked in about 90 seconds in a 900-degree oven. Each dough ball ferments 48 to 72 hours before it is stretched into a millimeters-thin, 11-inch round. Carollo told the Inquirer that the margin for error is razor-slim, with just seconds separating a finished pie from a burned one.

Inquirer critic Craig LaBan named Spuntino among the suburbs' best pizzas in 2017. Carollo told the Inquirer his craft has sharpened considerably since then.

The Inquirer's full profile details the family's history, the menu and the process behind the pies. Readers looking for the complete story can find it through the link above.
